The menu changes fairly often at Bar Vasco. They still have the potatoes and I believe the peppers. They have also added a hummus options. Please confirm any vegan options when ordering. They also have vegan milk options. Also many cocktails have egg whites but fee foam can be requested as a substitute.

Currently, there are two menu items that can be modified to accommodate vegans: Shishito peppers without mayo, and Papas Bravas without sauce or mayo. Additionally, guests can request a plate of pickles and olives for another vegan-friendly option.
